Recipe of the Season: Seasonal Salad, Vegetables, Grains and Avocado Vinaigrette

This colorful and flavorful salad serves 4-6 people.

½ cup Snow Peas
½ cup Snap Peas
½ cup English Peas
½ cup Haricot Vert Beans
4 Asparagus
4 White Asparagus
4 Baby Beets
1 Watermelon Radish
2 handfuls Arugula
1 Red Gem Lettuce
12 sprig Cilantro
2 Avocado
1 Radicchio
10 Teardrop Tomatoes
¼ cup Crumbled Goat Cheese - marinated in chiles, herbs and olive oil
2 oz Toasted Pine Nuts

Avocado Vinaigrette

1 Avocado
1 Lemon, juiced
1 Jalapeno, seeded and diced
4 sprigs Cilantro
⅓ cup Buttermilk
⅓ cup Olive Oil
Salt and Pepper to taste

Puree all ingredients in blender


¼ cup Quinoa
¼ cup Hemp Seeds
¼ cup Farro

All ingredients should be cooked to directions on product. Toss with olive oil,
lemon juice and salt and pepper to taste. Serve at room temperature.

Finishing Touch

Season all ingredients with the vinaigrette and assemble on top of the grains. Sprinkle with crumbled goat cheese and enjoy!
